Asian Potatoes & Carrots

What you’ll need:

  • 2/3 SOF carrots, finely shredded with shredder
  • 1 potato, peeled and shredded
  • 20gm SOF coriander, minced
  • 3 cloves of garlic, minced
  • ½ tablespoon soya sauce
  • 2 tablespoons of boiling water
  • 1 teaspoon sesame oil
  • 1 tablespoon olive oil or butter
  • Salt, pepper and grated fresh ginger

What you’ll do:

1. Heat a pan under medium heat with a tablespoon of olive oil and add the potatoes, carrots and garlic. 

2. Stir and toss, then add the hot water, turn the heat to low and place lid on the pan. Allow to cook gently until tender to your liking. 

3. Add salt, pepper, ginger, soya sauce and sesame oil in the last 30 seconds – give a good toss.

4. Top with coriander and sesame – serve!
