Egg-White & Okra Omelette

What you’ll need:

  • 3 SOF egg whites (keep the yolk for home-made mayo or desserts)
  • A dash of low sodium soy sauce
  • A drop of olive oil
  • 1/2 cup SOF okra, cut into rounds
  • 1-2 SOF tomato, sliced

What you’ll do:

  1. Cover the pan with olive oil then add the okra on medium-high heat – let it cook for 3-4 minutes.
  2. Add the soya sauce to the egg whites and whisk, then add to the pan.
  3. In less than a minute add the tomato slices and let it cook for 3 more minutes.
  4. Lower the heat and cover the pan for 2-3 minutes – don’t overcook the eggs. 
  5. Serve with a side of brown toast or sour dough bread
