What you’ll need:
- 3 SOF egg whites (keep the yolk for home-made mayo or desserts)
- A dash of low sodium soy sauce
- A drop of olive oil
- 1/2 cup SOF okra, cut into rounds
- 1-2 SOF tomato, sliced
What you’ll do:
- Cover the pan with olive oil then add the okra on medium-high heat – let it cook for 3-4 minutes.
- Add the soya sauce to the egg whites and whisk, then add to the pan.
- In less than a minute add the tomato slices and let it cook for 3 more minutes.
- Lower the heat and cover the pan for 2-3 minutes – don’t overcook the eggs.
- Serve with a side of brown toast or sour dough bread
