What you’ll need:
- SOF zucchini
- SOF tomatoes
- SOF red radish
- SOF spring onions
- Greek feta or any preferable cheese
- 1 cup burghul
- Handful dried cranberries
- Juice of a lime
- 3/4 tablespoon garlic powder
- Chopped up walnuts
- Dried dill or SOF fresh dill
- 1 tablespoon olive oil
- Salt & pepper as per taste
What you’ll do:
- Boil one cup of water in a small pot with a pinch of salt, put one cup of burghul in the boiling water then stir. Turn off the heat and cover the pot for 5 minutes.
Cut the zucchini in half then take out the insides carefully, then cut the top of the tomato and take out the insides with a spoon.
Simmer some water in a pan, put the zucchini & tomatoes then cover for 10 minutes or until tender(keep a close eye on them because they can get soggy quickly)
Fluff the burghul with a fork then mix in dried cranberry, salt, pepper, garlic powder, SOF spring onions, dill, lemon juice, and walnuts.- Add Greek feta cheese bits on top, drizzle olive oil & serve.
